Key West’s The Stoned Crab, adjacent to the Ibis Bay Beach Resort, is no ordinary seafood restaurant.
Famous for its legendary stone crab claws, the dockside restaurant’s owner Chris Holland and executive chef Paul Menta recently formed a partnership with its next door, or more appropriately “next dock” neighbor Three Hands Fish, a community seafood market that sells fish caught earlier that day by their very own Florida Keys commercial fishermen.
Each day, Three Hands Fish commercial fishermen deliver their day’s catch to the Market, where a portion is then immediately sold to The Stoned Crab; restaurant chefs cook-to-order the just-caught fish in a variety of ways, including one newly introduced technique outlined below. Caught at 7:00 am, delivered to the restaurant at 11:00 am, served at 1:00 pm – no fish is fresher than The Stoned Crab’s fish!
What’s more, for the adventurous dinner, The Stoned Crab now offers their “Whole Fish Dining Experience.”
Through working with Three Hands Fish commercial fishermen, The Stoned Crab chefs learned an old fishermen secret: cooking and consuming fish whole provides maximum flavor and various health benefits. The Stoned Crab took this to heart and began serving just-caught whole fish – prepared baked, blackened, or fried – and the community is absolutely loving it. Customers can actually select their whole fish, caught earlier that day, from an LED-lit “Select Your Fish” display case located in the restaurant’s front.
