Cocktails have a French/Californian twist such as Champagne Californication with thyme-infused cognac, lime, and caramel and West Coast Sling with sage-infused vodka, lemon, and Campari. Fresh ingredients are supplied from the hotel’s very own herb garden including their own honey from bees on the roof.

The range of French and new-world wines has been expertly chosen by Olivier Poussier, winner of the ‘Best Sommelier in the World’. Olivier has over 30 years of experience in the trade as a sommelier, wine buyer, and wine writer. He has worked in some of the best restaurants in Europe and consulted on countless wine lists. The extensive range of still and sparkling wines by the glass are preserved by cutting-edge technology and guests are invited to serve themselves from the Enomatic wine dispensing system, creating a fun and interactive wine-drinking experience.
